Defrost overnight in the refrigerator. Keep the packaging sealed while defrosting.
To cook in the oven: Preheat oven to 160°C (325°F). Add hot water to baking sheets (to about a 1/4 inch of depth). Cover the baking sheets with tinfoil and place them in the oven. Cook until the meat from the ribs begins to recede from the tips of the ribs (about 1.5 hours). Remove the ribs from the oven and discard any liquid in the tray. Increase the oven’s heat to 230°C (450°F). Brush BBQ sauce on one side of the ribs and cook until the sauce is golden brown and bubbly (about 5 minutes). Turn the ribs over and brush the other side with BBQ sauce, and cook for another 5 minutes.
To cook on the grill: Follow oven cooking instructions above, until it’s time to remove the ribs from the oven and discard the liquid in the baking tray. After discarding the liquid, transfer the ribs to the grill. Heat the grill to high and cook the ribs for 10 minutes. Turn the grill down to medium. Cook the ribs on medium-low and grill for 15 minutes, brushing with BBQ sauce and turning occasionally.
To cook on the BBQ (low & slow method): Pre-heat BBQ to 250°F. Set both left and right barbecue dials to low, leaving middle off. Cook pork back ribs over INDIRECT HEAT. This means your back ribs should be placed on the side of the grill that has NO direct heat underneath it. Keep lid closed. Cook pork back ribs on the barbecue for approximately 3-6 hours. Or until internal temperature reaches 195°F.
